Home Made Pasta

Wafaa may be interested in natural stuff now a days, but I'm interested in my tummy. I used to think that all pasta is created equal and that it's mostly about the sauce. I saw a tv show where a London cook compares different types of pasta. The home made one had all kinds of ridges and crevasses on it. When you put the sauce on it, it sucked all the sauce and picked up more sauce with every bite. On the other hand, the machine made pasta's surface was so smooth and slippery that non of the sauce stuck to it and most of it ended at the bottom of the plate.

Home made pasta is really easy to make you need 4 ingredients: 1 cup flour, 1 egg, 1 tbls (water or olive oil), 1/4 tbs salt. If you wanna make whole wheat then use 1/2 whole wheat flour and 1/2 white flour. Just mix all ingredients and let set for 30 mins or more so the gluten relaxes. Then spread and cut pasta pieces. You can do a big patch and freeze some.

Alternatively, if you're not cheap like me, you can pay extra and buy some gormet pasta that is usually machined through bronze pieces instead of plastic. This will also create a non smooth surface perfect for picking up the sauce. You can easily tell just by looking at the pasta if it has a smooth surface or not.
