Omelette du Fromage

Tired of the same old scrambled eggs?

Without going into a big time consuming recipe, I've been eating my eggs a little differently these past couple of weeks.

The first is the soft boiled egg. I place some eggs in water and bring to a boil. Once the water hard boils, remove the eggs right away and place in cold water to stop the cooking. Put the egg in a small Turkish coffee cup or a shot glass. Crack the top of shell and peel off so a small spoon could fit through. Sprinkle some salt and dig in. The yolk should be still liquid, warm, and creamy. If the yolk is cooked you've left it in for too long. Try removing it about 1 minute earlier next time. It's delicious.
I also imagine it would taste pretty darn awesome if you remove the shell, mash it, and spread it over a slice of bread toasted in butter.

My second suggestion is to make an omelette. Whisk together 2 eggs, 2 Tbsp of cream (or more), a Tbsp of ground flaxseed (optional), a handful of grated Parmesan, oregano, salt, and black pepper. Melt a Tbsp of butter in a nonstick pan, add part of it to the egg mixture and whisk in. I don't know hot to flip an omelette mid-cooking so my workaround is to pour the eggs into the pan, cover, place over low heat. Cook until eggs are cooked through. Remove from heat and flip onto a plate. They should be fluffy and a little crispy.
