Tomato Roasted Chicken
preparation time (5 min, seriously)
cooking time (35-45min)
Ingredients:
1 boneless skinless chicken breast, halved
1 tomato
1/4 cup of shredded cheese (Parmesan and Mozzarella)
1 Tbs. olive oil
2 Tbs. of apple cider vinegar (or lemon juice, or any other kind of acid)
1 clove of crushed garlic (or 1/2 tsp of garlic powder)
Some fresh basil leaves (or 1 tsp of dried basil)
1/4 tsp black pepper
Salt to taste (I used about 1/4 tsp in the marinate and sprinkled some on before eating).
Directions:
Preheat Oven to 350F (175C).
Mix the olive oil, vinegar, garlic, pepper and salt, and rub the chicken breasts with them. You can also let it marinate for a few hours.
Lay the chicken breasts on a non stick oven pan. Place half of the basil on top of the chicken (shred them with your hand if fresh, or sprinkle if dry), then add the cheese on top of that.
Slice the tomato into half moons and layer it on the top. Sprinkle the rest of the basil on.
Place the pan in the oven, uncovered, and bake for 35-45min, checking it with a knife to see if it's done.
Feel free to add your favorite side dishes to this. I think some roasted cauliflower would be a great addition next time. Although, frankly, it was very filling all by itself.

oooh this looks good, I need easy quick dishes. I'll do this one this weekend. I think a baked potato or some steamed broccoli with butter would be awesome next to this. Or better still, since it's still there, Asparagus!
